Ingredients:
2 oz Martinique V.S.O.P rum
34 oz Lustau Oloroso Don Nuño Sherry
12 oz Bittersweet orange-red aperitivo
2 dash Angostura Aromatic Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of orange zest twist.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. EXPRESS orange zest twist over the cocktail and use as garnish.

I made this with Pussers Navy Rum (so cut back the quantity to 45ml as it's 55% abv), Select and oloroso.
VERY impressed - the rum and sherry are very clear at the same time, the whole thing washed over with a gentle bitterness.
I'd have a second, but I'm a little frightened of it.

Fantastic cocktail. I love the original recipe, but also I make my riff with Spanish brandy and is a totally new experience.
