Ingredients:
1 12 oz Rémy Martin V.S.O.P. cognac
1 oz Lemon juice (freshly squeezed)
23 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 whole Egg (white & yolk)
1 12 oz Thomas Henry Ginger Ale

How to make:

  1. Select and pre-chill a Goblet glass.
  2. Prepare garnish of quarter orange slice wheel.
  3. SHAKE first 4 ingredients with ice.
  4. STRAIN into ice-filled glass whilst also pouring ginger ale.
  5. Garnish with quarter orange slice on rim.

LAWN TENNIS COOLER.
Into a small mixing-glass place a dessertspoon of sugar, the juice of two lemons, one raw egg and a jigger of cognac. Shake well with two or three lumps of ice, pour into a large goblet, fill up with ginger ale, stir, decorate and serve with straws.
