Serve in a Coupe glass

Ingredients:
3 fresh Cherry tomato (fresh)
2 oz Ketel One Vodka
0.08 oz White balsamic vinegar
12 oz Lemon juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 dash Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare black pepper and cherry tomato for garnish.
  3. MUDDLE tomatoes in base of shaker.
  4. Add other ingredients and SHAKE with ice.
  5. FINE STRAIN into chilled glass.
  6. Dust with grind of black pepper and garnish with a cherry tomato cut to sit on glass rim.

Adapted from a recipe created in 2011 by Jimmy Barrat at La Petite Maison Dubai (LPM). This was also the signature cocktail Jimmy made for the 2012 World Class Bartenders' competition.

tried twice: 1st with a lemon that might have been a lemonade lemon, which made it a little sweeter & really lovely, well balanced that preserved with tomato base. Tried a 2nd time with a standard lemon, but was a bit too sour. Shall try 10ml next time for a standard lemon.

I’m going to try this again, and tweak it because I really liked it, but think I can do better. Unlike the review above, I found it too sweet, so added a touch more vinegar. It probably also depends on how ripe your tomatoes are. I also added Scrappy’s Fire Tincture which matched well and complemented the pepper. Next time I’ll cut back on the simple syrup, and carefully watch the balance.

Had to try it. Honestly a little disappointed, but not for the reason you might expect. The biggest problem with this one for me was that between the vinegar and lemon juice, this is a VERY sour cocktail. So much so that it throws the tomato, and the entire drink, way off balance. Proportions could use a bit of tweaking on the recipe but I still think this one has potential.
