Serve in a Coupe glass

Ingredients:
2 oz Straight rye whiskey (100 proof /50% alc./vol.)
12 oz Lustau San Emilio Pedro Ximénez Sherry
1 dash Angostura Aromatic Bitters
1 dash Black walnut bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of Luxardo Maraschino Cherry.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with maraschino cherry.

Rye whiskeys’ strength and spice cuts through and dries the rich sultana notes of PX sherry with the bitters, particularly the walnut bitters, adding flavour and complexity.

Very, very dry. All I have is a grocery store Very Dry Sherry so I likely need a higher quality to really determine if this is right. I do taste the complexity of this however; its deep with the rye and the walnut bitters.

Wild woman here: I had bourbon. I had an Amontillado sherry. I had homemade nocino from our walnut tree. It is sooooooo good.

Dominated by the rye and the walnut bitters. I like both, so this is good IMO, but I think if I dialed back the rye to 1 1/2 oz it might allow the PX sherry to come thru (and it is a waste of sherry if you can't taste it).
