Glass:

Serve in a Sour or Martini/Coupette glass

Ingredients:
1 oz Italian red bitter liqueur
1 oz Strucchi Dry Vermouth chilled
34 oz Pink grapefruit juice (freshly squeezed)
12 oz Lime juice (freshly squeezed)
13 oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer
2 dash Orange Bitters by Angostura
× 1 1 serving

Prepare:

  1. Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.
  2. Prepare garnish of orange zest twist.

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.

Garnish:

  1. EXPRESS orange zest twist over the cocktail and use as garnish.

A Brighter, more lively version of cocktails in the negroni realm. Grapefruit shines over the red bitter. Combined with the velvety effect of the egg white, this goes into the favourites file.
