How to make:
SHAKE all ingredients with ice and strain into ice-filled glass.

|1/3 fl oz||Fino sherry|
|2 barspoon||Chilpotle oleo-saccharum|
|5/6 fl oz||Lemon juice (freshly squeezed)|

To make Chilpotle oleo-saccharum:
Make an oleo-saccharum in the usual way but finish with a cold infusion of chilpotle jalapeño to taste.
