This is wonderful. Having a large collection of rums, this is powerful and direct. You need quality ingredients as there are only a few. Made our honey syrup out of local honey, and used Wray and Nephew white overproof rum. While it is strong, it does drink easily. Great as an evening sipper/nightcap.

This seems a bizarre way of measuring to me. There's no such thing as 3/4 of part. The point of ratios is to make it whole numbers so it's 2 rum to 1 honey syrup to 1 lime juice. And no-one is measuring 22.5 mls, 50 mls rum to 25 mls honey syrup to 25 mls lime is the same drink and only 10 mls more so quite acceptable. Love the daily cocktail suggestions btw.

I have bought the jiggers that Simon has created. It allows you to do all types of measurements. As I am in the US and had to paid international shipping, I ordered multiple and was glad I have more than one. They are our favourite jigger.

6 spoon = 6*5ml? so 30 mils of honey?

Hi Jordy. I've just revisited this recipe and updated. It does need a generous dose of honey but easier if made into a syrup.
