Ingredients:
1 12 oz Applejack brandy
13 oz Giffard Crème de Pêche de Vigne liqueur
13 oz Licor 43 Original liqueur optional
34 oz Lemon juice (freshly squeezed)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
4 drop Bob's Vanilla bitters
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist expressed & discarded. Adorn with dehydrated apple slice..
  3. SHAKE all ingredients with ice.
  4. STRAIN back into shaker.
  5. DRY SHAKE (without ice) to emulsify.
  6. FINE STRAIN into chilled glass.

The Delicious Sour
A Goblet with the juice of a lime,
A squirt of seltzer,
A spoonful of sugar,
½ of apple-jack
½ of peach brandy,
The white of an egg.
Fill your glass with ice, shake well, strain, and serve.

I added some cardamom bitters and peach bitters when I made this and the bitters gave it a nice bit of complexity. I'd recommend it.

Is that a typo, or is the syrup really one-twelfth of a shot?

Not a typo but an optional small amount of sugar to balance. 0ne-twelfth ounce (shot) is approx half a bar spoon or 2.5ml.
