Serve in a Coupe glass

Ingredients:
1 12 oz Hayman's London Dry Gin
1 barspoon Honey
14 oz Strucchi Red Bitter (Campari-style liqueur)
12 oz Lemon juice (freshly squeezed)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of grapefruit zest twist.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. EXPRESS grapefruit zest twist over cocktail and use as garnish.

What in the world? It worked wonderfully. I used aquafaba and only shook it once. The Campari cuts through any richness of the honey, but only just enough to be balanced. I got a surprisingly thick and satisfying foam on top as well. I'd give it a 4.5, personally.

Interesting that not dry shaken despite having egg white. Means not very thick foam. Worth trying with a dry shake - I do enjoy a cocktail foam!

Didn’t have honey so used agave nectar instead - worked just as well!
