This cocktail is also known as a Papa Doble for good reason; it's twice the size of a regular cocktail. Hence, the above recipe will fill one oversized...
Ok, been working through this recipe since maraschino has been available in my part of the world for the first time (3 separate attempts)
First and foremost- this version is ultimate when it comes to ratios. No question.
Using pink pink grapefruit fresh pressed makes all the difference - the only improvement I think I can bring to it is to use granulated sugar instead of syrup (trust me, the slight difference in dilution is noticeable); my preference for aged rum (Havana Club Especial, 37.5%) while watching the 50’s version of The Old Man And The Sea might be a bias.
The only thing the site could use at this point is a way to calculate a half recipe. Because some users may start writing a novel after only 2 iterations.
I can't quite halve it for you, but its proportions are 14:4:3:4:2 based on multiples of 7.5ml.
If you made it with multiples of 5ml, you would have
70ml rum / 20ml grapefruit / 15ml maraschino / 20ml lime / 10ml sugar
[Hemingway Special Daiquiri]
My grapefruit was definitely on the mild side, so omitted the sugar altogether and was happy with the balance. My palate i would say is sweet-leaning. Loved the Luxardo depth and roundness here. Split the rum between plantation 3 star and Havana 3. Delicious!
Great cocktail even made with cheap white rum as I have no Havana Club 3 or Plantation 3 at the moment. Probably needs less sugar if you're using pink or red grapefruit.
Made this again with Barbados rum. Outstanding also as rum is Barbados is not adulterated with sugar before bottling. Makes the cocktail a bit drier, but without the Jamaican funk that I added the first time. Both are great.
Since we were using smaller glasses. We added 4 drops of Bob's Difford's Daiquiri Bitters to the second part. This this cocktail to a next level. Adds some depth of flavour and complexity.
Just got my first ever bottle of Luxardo Maraschino and I could think of no better cocktail to crack it open for than this.
Strong and rummy with citrus and cherry. Perfect for sipping on a hot June evening.
An excellent cocktail! For those of you like me who may not have Hemingways EtOh tolerance, scaling this drink to 2/3 (works out nicely using ml and the Easy Jigger!) creates a smaller drink that doesn't require a large coupe glass. (Full disclosure: I used "rich" gomme syrup instead of "rich" simple syrup which for me created a nice mouth feel. I also used 2 drops 20% saline solution, but not sure I would do so again.
What a delightful cocktail. Since I don't have "Cuban" rum, I used the home-made Black Tail bar "Cuban" rum blend recipe ( supposedly mimics Cuban Rum). It was absolutely wonderful. Nicely balanced and remarkably smooth.
Hey Difford’s Guys, nothing to do with this mix (one of my favorites’ though): love the new layout of your website. Quite trendy and very professional, as always. Keep going.
Many thanks for your kind words. We've still a little polishing still to do then we'll be adding some more new features still under development. Like the recipes, it's a constant work in progress.
Absolutely a fantastic cocktail- skip the sugar altogether and stick with simple Bacardi silver—- Then try to drink 15 of these in one setting like Hemingway…. God Bless America and don’t forget British Gin (Scotland makes the best!)
Great drink, as I was almost out of sugar syrup I used half sugar syrup, half orgeat which gave it a nice additional hint of almond which worked perfectly in this drink!
Outstanding. Large and boozy. Strong flavour of rum. Based on comments, we used 1/2 sugar syrup as we like our cocktails a bit sour. Used Jamaican gold rum as I like Jamaican rum taste. Perfect.
Very enjoyable. Needs lots of ice I the shaking because of the volume. Perhaps a little bit sweet- esp if using proper cherries in the syrup. Next time I will use less sugar syrup and a touch more grapefruit. But good stuff overall.
Been making this cocktail/recipe for years and it is wonderful any season, sipping one now 12.24.2020, don't forget the Luxardo gourmet-marachino cherries. The Commodore's House in NOLA serves a Papa Dople that is excellent, ordered mine in the kitchen bar, try it there.
