Such a wonderfully sumptuous and yet simple cocktail. As a Cognac variant, we have settled on a base spirit split of 30ml Cognac and 15ml Mezcal (we think that they are a match made in heaven).

The comments here are interesting. I substituted the Punt e Mes with Cocchi Torino and little helpings of Ango and Campari and it was surprisingly balanced! Though I will say that the cherry liqueur got a little lost.

Inveterate fiddlers that we are, we decided to try a Cognac version of this...simply substituting the 45ml of Mezcal for the same volume of Cognac. But retaining 5ml of Mezcal. We loved it. Next time we might go more on the Mezcal, out of curiosity. The original version of the drink is brilliant, of course.

Smoked cherry goodness. What’s not to like? More Phil ward magic. I’d be tempted to try with Cocchi vermouth amaro subbed for the punt e mes next time.

Had to extemporise so swapped Cherry Herring with De Kyper and I only had Zignum Mezcal (not very Smokey). However a great cocktail, less sweet than others have noted and of course less smoke. Terrific balance

Beautifully balanced. We serve this in a Rocks glass with a chunk of ice. Summer evenings can be warm where we are.

Sip and contemplate...Alex's observation about layered flavours is spot on and Thorsten's tobaccoiness; I tasted that! Simon your review made me chuckle. Five stars.

This one commands your attention - the layered flavours are subtle and easy to miss if you're not truly savouring it. The next time I try it I'll try reducing the mezcal a touch, as it is more domineering than I'd like, but perhaps by not as much as 15mls. Maybe another couple of dashes of absinthe, too.

I finally came back to this one (forgetting I had already commented on it two years ago)—taking 5mls off the Mezcal and doubling the absinthe made it perfect (for me).

I liked the cocktail but I would reduce Mezcal quantity for 30ml. Very boozy and 45ml of Mezcal takes away other interesting flavours. Anyway, a good drink for a smoke fan.

Excellent cocktail, great late night sipper. I love the bold flavours, and it's remarkably balanced as well.

Must try again with a joven mezcal as my stock came over way too overpowering of all the other ingredients. Meanwhile, get me Thorsten's thesaurus.

A great interplay of smokiness, tobaccoiness and the tart flavours of Vermouth. The cherry liqueur does not become dominant, but carries and buffers the other flavours with the necessary sweetness. The absinthe then provides even more booziness, but together with the saltiness of the mezcal also a kick and even more complexity. Speaking of alcohol, it does the drink good to be stirred a little longer, it can take some melting water. You have to be a little careful that it doesn't get too sweet.

Made it with 400 Conejos so it’s slightly smoky and very nice ??

I made it with Luxardo instead of Cheery Heering and still found it a bit too sweet.
