I had some homemade elderflower “champagne” from my mother in law, so swapped the St Germain for plain sugar and halved it as the champagne is quite sweet already. Ford’s for the gin. Happy with the balance 😊

I used eureka (tart) lemons as Meyer, although in season, were interfering with the delicate elderflower flavours.

Nice brunch cocktail option. Bubbly lemon with subtle gin, elderflower, and champagne.

This is a really good cocktail. I try to always use Meyer lemons which are not as tart. The champagne, or I should say sparkling wine, was Domaine Chandon (Napa USA) brut. A taste of spring!

This works just as well, if not a smidgen better with Italicus/Bergamot Liqueur.

Outstanding. Had this cocktail for New Year Eve luncheon. Went perfectly with Chicken and Broccoli crepes. Loved the hint of elderflower and the herbal of the gin.

Very pleasant, but I think I prefer it with a tad more champagne, to take the edge off the sweetness.

A very delicate balance between the lemon juice and the liqueur to maintain. The final taste is very dependent on the acidity of the champagne (or sparkling wine) used. The quality of sparkling wine is generally the opposite of its acidity, so if you use a basic sparkling wine or champagne, you should reduce the amount of lemon juice. If you are using a high quality champagne (Krugg, etc), reduce the amount of liqueur. For a good medium range champagne (Taittinger, Moet…), stick to base.

A nice balance of flavours if a little lemony…we had to have another and added 30% less Lemon juice and it was a better drink, more Elderflower came through…Very nice :-)
