Ingredients
1 fl oz Light white rum (charcoal-filtered 1-4 years old)
1 fl oz Cognac (brandy)
1/2 fl oz Lime juice (freshly squeezed)
1/3 fl oz Orange juice (freshly squeezed)
1/3 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix
1/3 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer

How to make

Glassware

Serve in an Old-fashioned glass

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of orange and lime zest twists.

Method

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into ice-filled glass.

Garnish

  1. EXPRESS orange and lime zest twists over cocktail and then discard.

Rum, like gin, blends well with many other liqueurs. Here's a cocktail using a rum and cognac combination as a base.
BOLERO.
1 part Sugar Syrup
2 parts Lime Juice
4 parts Gold Label Cuban Rum
4 parts Cognac
1 teaspoon Orange Juice to each drink
Shake with finely crushed ice.

Really nice drink, with every component just perfectly balanced. Every element, from the esters of the rum (I used Havana Club 3), the fruitiness, woodiness and grape-y nature of the Cognac, along with the citrus sweetness of the orange, plus tartness of the lime (with the exception of aquafaba in place of egg white, which merely contributed the foam) came through so wonderfully. I'd give this a 4.5, personally.

This was one of the cocktails of the day in memory of the introduction of the spreadsheet. As I was an user of Lotus 1-2-3, made it in honour. It is a very flavourful and interesting sour. It is spirit forward, but the combination of the rum and cognac along with the juices gives the cocktail a unique taste.
