Ingredients:

1 1⁄2 oz	Cherry juice
1 1⁄2 oz	Exprè Caffè Italiano (or freshly made hot Espresso Coffee)
1⁄2 oz	Monin Almond (Orgeat) Syrup
1⁄3 oz	Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer
5 drop	Saline solution (20g sea salt to 80g water) or merest pinch of s

Prepare:

1. Select and pre-chill a COUPE GLASS.
2. Prepare garnish of orange zest twist and skewered Luxardo Maraschino Cherry.

How to make:

3. SHAKE all ingredients with ice and strain back into shaker.
4. DRY SHAKE (without ice) to emulsify.
5. FINE STRAIN into chilled glass.

Garnish:

6. EXPRESS orange zest twist over the cocktail and use as garnish.
7. Garnish with skewered maraschino cherry.
