Serve in a Collins glass

Ingredients:
34 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 fresh Mint leaves
3 12 oz Thomas Henry Ginger Beer
× 1 1 serving

Garnish: Mint sprigs bouquet

How to make:

POUR first 2 ingredients into glass and half fill with crushed ice. ADD mint leaves and CHURN (stir). Fill glass with more crushed ice and TOP with ginger beer. Briefly churn to combine.

This Mojito may lack alcohol, indeed it's alcohol-free, but it's refreshing, balanced and tasty nonetheless.

History:

Adapted from a popular drink on the menu of Jamie's Italian restaurant and bar chain circa 2014. I discovered and borrowed the No-jito name from Wagamama restaurants in January 2023.

Had no ginger beer (not even Fever Tree stuff) at hand, so I had to make do with muddling a small piece of ginger root with the lime and simple, then making a quick PDT ginger beer (just ginger syrup and soda), to top it off. Just ginger ale on the top, with the mint coming towards the end.
