Ingredients:
1 oz Speyside single malt Scotch whisky
1 oz Honey herbal liqueur (e.g. Drambuie)
56 oz Lemon juice (freshly squeezed)
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare lemon slice wheel garnish.
  3. SHAKE all ingredients with ice.
  4. STRAIN back into shaker.
  5. DRY SHAKE (without ice).
  6. FINE STRAIN into ice-filled glass.
  7. Garnish with lemon slice wheel.

It takes a single malt to properly live up to the big flavours of the whisky liqueur. The only question is how much lemon juice and additional sugar suit your taste?

Another fine variation on the whisky sour. The blend of single malt, Drambuie and lemon works really well .
