How to make:
SHAKE all ingredients with ice and strain back into shaker. DRY SHAKE (without ice) and fine strain into chilled glass.
|1 2/3 fl oz||Del Maguey VIDA mezcal|
|1/4 fl oz||Green Chartreuse liqueur|
|1/4 fl oz||Cynar or other carciofo amaro|
|1/2 fl oz||Lemon juice (freshly squeezed)|
|1/3 fl oz||Sugar syrup 'rich' (2 sugar to 1 water, 65.0°brix)|
|1/2 fl oz||Pasteurised egg white (or aquafaba)|

Your choice of mezcal, the "smoke" element in this cocktail, will greatly impact its flavour. Select well and the result will be a deliciously herbal and delicately smoky sour.
