Serve in a Coupe glass

Ingredients:
30 ml Angostura di Amaro
15 ml Lime juice (freshly squeezed)
30 ml Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Vegan egg white replacement
0.6 ml Angostura Aromatic Bitters
15 ml Sugar syrup 'simple' (1 sugar to 1 water, 48°Brix)
22.5 ml Caribbean blended rum aged 6-10 years
