Ingredients:
112 oz La Fée Parisienne absinthe
1 23 oz Calvados / apple brandy / straight applejack
12 oz Straight rye whiskey (100 proof /50% alc./vol.)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
3 dash Peychaud's or other Creole-style bitters
1 dash Angostura Aromatic Bitters

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of lemon zest twist and lemon zest knot.
  3. POUR absinthe into chilled glass and roll glass so as to coat the inside with absinthe.
  4. Discard excess and set glass aside.
  5. STIR other ingredients with ice.
  6. STRAIN into absinthe-rinsed glass.
  7. Express lime zest twist over cocktail and discard.
  8. Garnish with a lemon zest knot.

Just splitted the syrup, adding a bsp of maple syrup to bsp of 2:1 cinnamon syrup. It opened the Calvados really well. For garnish used a gold pear fan. It was amazing.

Take 2. Re-reading this as a calvados drink rather than a Sazerac gives a fresh perspective. Much better.

Very nice. The Avallen calvados is gorgeous. Its apple flavour stands out. I prefer this recipe without the sugar syrup.

If you like apple brandy and also oike sazeracs, this one is a slam dunk.

Made with Laird’s as well as with a Calvados. Laird’s wins hands down.
