Serve in a Martini glass

Ingredients:
1 12 oz Absolut Vanilia Vodka
12 oz Coconut rum liqueur (35-40% alc./vol.)
14 oz Lime juice (freshly squeezed)
34 oz Pineapple juice
14 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Egg white replacement (vegan)
124 oz Bols Blue Curaçao

Prepare:

  1. Select and pre-chill a MARTINI GLASS.
  2. Prepare garnish of pineapple wedge.

How to make:

  1. SHAKE first 5 ingredients with ice and strain back into the shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.
  4. POUR the liqueur into the centre of the cocktail. It should sink to create a blue base and leave a blue spot in the centre of the cocktail's frothy head.

Garnish:

  1. Garnish with pineapple wedge on rim.

Variant:

This cocktail can be finished with your choice of different coloured and flavoured liqueurs. For example, substitute blue curaçao (blue) for melon liqueur (green) or a berry liqueur such as cassis (red).

History:

My 2003 adaptation of the then signature cocktail at the MercBar on Mercer Steet in Manhattan, New York City.

It scores high visually, but then it falls a bit flat. I used Mrs Better’s for the foam instead of the egg white and maybe that didn’t help, it didn’t have much body and just tasted a bit lacklustre.

Taste a drop of Mrs Better's foamer neat. A few drops of bitters impact a cocktail, and so do such foamers.

For us, this drink has no bridge from the first, quite lackluster and austere, sips to the very enjoyable finale of the Curacao. So we switched in light white rum for the vodka and added 10ml Falernum. An improvement for us but we might revisit the vodka and search for an added liqueur as a bridge and to complement the coconut. A very pretty drink.

The addition of 15ml Davo Plum Aperitivo Bitters to the original vodka-based recipe worked a treat for us.
