Glass:

Serve in an Old-fashioned glass

Ingredients:
2 oz Caribbean blended rum aged 6-10 years
12 oz Difford's Falernum liqueur
34 oz Pineapple juice
34 oz Lime juice (freshly squeezed)
2 dash Old-fashioned / old time bitters
14 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer

Prepare:

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lime wedge.

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. STRAIN into ice-filled glass.

Garnish:

  1. Garnish with lime wedge.

I would either invert the ratios of the lime and Falernum or add some simple syrup to it. It feels unsweetened as it is now.

This is a surprisingly low volume of egg white...
