Serve in a Coupe glass

Ingredients:
1 12 oz Hayman's London Dry Gin
1 oz Elderflower liqueur
16 oz Lemon juice (freshly squeezed)
16 oz Lime juice (freshly squeezed)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of grapefruit zest twist.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.
  6. EXPRESS grapefruit zest twist over cocktail and use as garnish.

Easy drinking, fragrant. Can change quite a bit depending on the Gin. I substituted with wonderfoam, just a personal preference.

Elderflower is prevalent on the nose, but the gin is most definitely up front on the palate, followed by the St-Germain and finishing with the citrus sourness. A very easy drinking.

Made this two times, both with aquafaba. Tasty both times, but I actually got better results in terms of texture by dry shaking first, then adding ice. Shook for 40 seconds each time followed by a single throw.

Very nice sour. Nice balance the lemon and lime worked well together, I feel that kept the St Germain from taking the forefront. Very refreshing!

I think this is better without the egg white, I also used all lime as i couldn't be bothered to squeeze 2 different fruits, and it seemed to work ok. Nothing wrong with any gin and elderflower cocktails, they seem to go together very well.
