Serve in an Old-fashioned glass
2 oz | Patrón Reposado tequila |
3⁄4 oz | Agave syrup |
1 oz | Lime juice (freshly squeezed) |
Garnish: Cucumber foam
SHAKE first 3 ingredients with ice and fine strain into ice-filled glass. Top with cucumber foam. (Top make cucumber foam: fill a cream whipper two-thirds full with equal parts cucumber juice, 1:1 simple syrup and egg white, then charge with two nitrous oxide (N2O) cartridges and chill.)
Pronounced "Tea-You-One-Na" this is basically a Tommy's Margarita topped with cucumber foam.

I used 20ml Monin Sirop de concobre (cucumber syrup) and one egg white; shaked dry for 20 seconds to get an excellent tasting and stiff foam.
Overall, the cocktail is rather boring, but the cucumber foam makes things interesting, so definitily go the mile ; )
