1⁄2 oz | Strucchi Red Bitter (Campari-style liqueur) |
3⁄4 oz | Lime juice (freshly squeezed) |
1⁄2 oz | Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup) |
2 1⁄4 oz | Thomas Henry Soda Water |
Garnish: Mint sprigs bouquet & lime wedge
SHAKE first 5 ingredients with ice and strain into ice-filled glass. TOP with soda.

As the name suggests, this low-alcohol, tequila-laced, bittersweet Cooler is suited to summer drinking. All the better when enjoyed on the beach.
Adapted from a recipe created in 2018 by Priscilla Leonga bartender from Melbourne who won that years Australian Speed Rack competition with this cocktail. The North Beach Cooler is one of more than 100 Speed Rack recipes featured in the 2024 book North Beach Cooler.
