34 fl oz Gentian liqueur Gentian liqueur (e.g. Suze, Avèze, Salers)
34 fl oz Americano bianco (chilled)
6 drop Saline solution (20g sea salt to 80g water) or merest pinch of s

How to make

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of lemon zest twist..

Method

  1. STIR all ingredients with ice.
  2. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).

Garnish

  1. EXPRESS lemon zest twist over the cocktail and use as garnish.

I think I’ve come to the conclusion that I’m not a fan of gentian root (which is why I dislike Campari, but do like some other bitter red Italian liqueurs), but I actually like this. I made another version with bitter Bianco and I think I like it even better as it wonderfully accentuates the sweetness of the old Tom gin.

If you could only try one of the ‘white’ versions of the negroni, I’d make it this. Brilliant balance of flavours, so simple and retaining the bitter-sweet-herbal kick of a standard negroni, with some added savoury qualities. Had run out of Cocchi Americano so subbed 15 ml Lillet and 7.5 ml Bonal. 5 stars from me!
