Ingredients:
1 12 oz Hayman's Old Tom Gin
34 oz Gentian liqueur (e.g. Suze, Salers etc)
34 oz Americano bianco chilled
6 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving
Read about cocktail measures and measuring

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of lemon zest twist..
  3. STIR all ingredients with ice.
  4. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).
  5. EXPRESS lemon zest twist over the cocktail and use as garnish.

If you could only try one of the ‘white’ versions of the negroni, I’d make it this. Brilliant balance of flavours, so simple and retaining the bitter-sweet-herbal kick of a standard negroni, with some added savoury qualities. Had run out of Cocchi Americano so subbed 15 ml Lillet and 7.5 ml Bonal. 5 stars from me!

Did it with Cocchi Americano - excellent. I like it better than original White Negroni
