Glass:

Serve in a Coupe glass

Ingredients:
112 oz La Fée Parisienne absinthe
2 oz Rémy Martin V.S.O.P. cognac
34 oz Dubonnet, Byrrh etc. rouge light quinquina
14 oz Americano bianco
16 oz Fernet Branca liqueur
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. No garnish to prepare.

How to make:

  1. RINSE chilled glass with absinthe, discard excess and set aside.
  2. STIR other ingredients with ice.
  3. STRAIN into absinthe-rinsed glass.

Garnish:

  1. Serve naked, without garnish.

Review:

Adapted from a recipe created in 2025 by J. E. Clapham of Clapham Cocktails. This is Mr Clapham's version of the Pool cocktail in William J. Tarling's 1937 1937 Café Royal Cocktail Book Coronation Edition.

  • 1.8 standard drinks
  • 26.01% alc./vol. (26.01° proof)
  • 25.4 grams of pure alcohol

"Spirit forward" is definitely the phrase for this one. Cognac dominates.
