Ingredients:
2 oz Hayman's London Dry Gin
12 oz Lemon juice (freshly squeezed)
13 oz Luxardo Maraschino liqueur
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
23 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Egg white replacement (vegan)
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lemon zest twist and skewered maraschino cherry.

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.

Perfectly nice, but lacked depth and complexity for us. We tried it with an Angostura stripe, and that helped a bit, but probably we would prefer some variant with herbal or bitter notes to give it more depth.
