1 1/2 fl oz Cognac (brandy)
2/3 fl oz Amaro (e.g. Averna)
1/2 fl oz Lime juice (freshly squeezed)
1/3 fl oz Monin Almond (Orgeat) Syrup

How to make

Glassware

Serve in a Coupe glass

Prepare

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of skewered raspberry.

Method

  1. MUDDLE raspberries in base of shaker.
  2. Add other ingredients and SHAKE with ice.
  3. FINE STRAIN into chilled glass.

Garnish

  1. Garnish with skewered raspberry.

I used Montenegro and Hine VSOP and I’m watching Wimbledon, so I swapped out raspberries for strawberries. I added a dash more lime juice, the tiniest spot of strawberry syrup and a twist of black pepper. It’s really delicious - feels summery and decadent but it’s very well-balanced. Grown up and not at all too sweet. Mind you, I guess it’s probably an entirely different cocktail now? 😂

As I didn't have Averno Amaro on hand, I substituted in Cynar (I thought Fernet-Branca would be too bitter which was the only other amaro I had on hand). I therefore hesitate on commenting on a cocktail recipe I didn't follow. However, should others find themselves without Averna, I can say this was very good. I didn't find it overly sweet as others have.

I went a little heavy on the lime (not 20 but well over 15) and found it well balanced. Also went heavy on the raspberries by accident as I was using frozen and they were broken up. It went into my favourites.

A bit on the sweet side. Upped the raspberries and dialled down the orgeat to 10 ml and it was much nicer

I had no Amaro so I subbed Galliano and omitted Orgreat. Still very sweet!
Next time Ill try adding a shot of tequila.

Decadent but not overpowering. We upped the amaro a bit to add a touch more bitter and offset the sweet orgeat. Nice evening sipper. Also good with a splash of Chambord and no fresh fruit if that’s what you’ve got.

I was just thinking that Chambord would get me out of straining raspberries…. How much does a splash equal in your practice?
