Serve in a Sour or Martini/Coupette glass

Ingredients:
1 23 fl oz Ferrand Yuzu Late Harvest Dry Curaçao
13 fl oz Pineapple rum
1 fl oz Pineapple juice chilled
34 fl oz Coconut water chilled
13 fl oz Lemon juice (freshly squeezed)
14 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
14 fl oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer

Prepare:

  1. Select and pre-chill a SOUR OR MARTINI/COUPETTE GLASS.
  2. Prepare garnish of mint sprigs.

How to make:

  1. SHAKE all ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. FINE STRAIN into chilled glass.

Garnish:

  1. Garnish with mint sprigs bouquet.
