Ingredients:
1 12 oz Rutte Celery Dry Gin
23 oz Lemon juice (freshly squeezed)
13 oz Pineapple juice
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
0.08 oz Fee Brothers Celery bitters
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of celery stick.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

History:

A cocktail named the Celery Sour first appears in Tom-Bullock's 1917 book, The Ideal Bartender.

CELERY SOUR
Fill large Bar glass full Shaved Ice.
1 teaspoon Lemon Juice.
1 teaspoon Pineapple Syrup.
1 teaspoon Celery Bitters.
Stir; strain into Fancy Wineglass with Fruit and Serve.
