Ingredients:
1 swath Orange peel
1 12 oz Caribbean blended rum aged 6-10 years
12 oz Carpano Antica Formula Vermouth
13 oz Amer Picon
13 oz Lustau Oloroso Don Nuño Sherry
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of orange zest twist (flamed).
  3. EXPRESS a flamed orange zest twist into empty chilled glass to line the inside with smoky oils.
  4. STIR other ingredients with ice.
  5. STRAIN into pre-prepared glass.
  6. EXPRESS flamed lemon zest twist over cocktail and use as garnish.

Burnt orange oils add smoky notes, complexity and balance to this bittersweet drink. A perfect after-dinner cocktail.

History:

Created in 2008 by Paul Mathew at The Hide, London, originally for the Boutique Bar Show "Free Spirit" cocktail competition. Based on the classic Fin de Siècle, but using rum in place of gin. Paul's original recipe called for: 45ml Diplomatico Reserva Exclusiva, 15ml Antica Formula, 10ml Amer Picon and Palo Cortado Viejo sherry.

A little gem that opens up as it gets a touch warmer in the glass and the empyreuma becomes more present in the after taste. Very clever.
