Ingredients:
1 12 oz Hayman's London Dry Gin
23 oz Giffard Menthe Pastille white crème de menthe
12 oz Monin Apple Syrup
1 oz Apple juice/apple cider (cloudy & unsweetened)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of dehydrated lemon slice wheel and rosemary sprig..
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. FINE STRAIN into chilled glass.
  6. Garnish with dehydrated lemon slice and rosemary sprig.

Review:

Sadly, there are few contemporary cocktails using crème de menthe, but this refreshing gin-laced, apple and mint cocktail is one of the stand-out exceptions.

Didn't have apple sugar syrup, so I subbed it with agave syrup. Rated it 5 even with agave, so could quite possibly be a 5+ for me with apple syrup.

I highly recommend Bombay Sapphire's Murcian lemon gin for this cocktail, it compliments the flavours perfectly.

Rather sweet for me but the Rosemary sprig gives it a freshness that was a lovely touch.
