1/2 fl oz Medium dry apple cider
1/2 fl oz Lemon juice (freshly squeezed)
1/3 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix

Method

  1. Select and pre-chill a COUPE GLASS.
  2. SHAKE all ingredients with ice.
  3. FINE STRAIN into chilled glass.

History

Adapted from a recipe created by the late Sasha Petraske at his famous Milk & Honey bar, New York City, USA. Sasha was inspired by the Apple Jack Rabbit in The Savoy Cocktail Book.

The Apple Jack features in Georgette Moger-Petraske's 2016 Sasha Petraske Regarding Cocktails.

Apple Jack
½ oz (15 ml) fresh lemon juice
½ oz (15 ml) Simple syrup
½ oz (15 ml) Apple cider
1½ oz (45 ml) applejack
Combine the lemon juice, simple syrup, apple cider, and applejack in a cocktail shaker filled with ice and shake vigorously until the drink is sufficiently chilled. Strain into a chilled coupe.

This is an outstanding cocktail. It's simple but every part works together beautifully to create something much greater. It's refreshing and balanced and just seems to convey the quintessence of apple flavour. I used Laird's Bottled in Bond and Gowan's Sierra Beauty Cider and followed the recipe to the letter. A virtually perfect drink.

Pretty solid with Laird's 100 and Austin Eastciders dry. Possibly the blandest 4.5 rating I've given. (19 Jul 2024, 4:01p) ... better with Aspall dry cider; it's like spiked apple cider, tasty asf (26 Sep 2024, 2:00p)

Sasha's original recipe calls for 1/2 oz apple cider (not juice) and 1/2 oz simple syrup (classic 1:1).

Many thanks, Georgette. I've added the original recipe from Regarding Cocktails above. We Brits can be confused by the US use of cider and hard cider. I corrected the recipe (allowing for the use of richer 2:1 syrup).

Cinnamon Apple Jack by GB: Add 1/2 fl oz of Cannella, which is a cinnamon cordial from Reno, Nevada. Complex, warm baked apple flavor, perfect by the fire on a winter’s evening after shoveling snow.

Great before dinner cocktail. Nice hint of apple, but not overly sweet. Well balanced. Used Laird's Bottled-in-Bond Apple Brandy.

Looking for inspiration for an apple juice cocktail other than a Tatanka (or just straight bison-grass vodka and AJ), delicious as they are I came across this. Don't have Applejacks but do have Calvados (Avallen) - Apple Jacques, perhaps!

Well of course I had to try it with 50ml, and yes it was better. Now, I have a surfeit of lemon juice! Luckily, I have the day off work tomorrow, so what next...

After spending the afternoon crushing and pressing a whole lot of apples, this was just the thing. I used Laird’s 86 proof straight applejack with the fresh cider, but it was a little one dimensional. Substituting a lightly flavored cinnamon syrup I had did the trick to compliment the apple. Yum.
