Glass:

Ingredients:
3 dried Green cardamom pods
1 23 fl oz Light white rum (charcoal-filtered 1-4 years old)
12 fl oz Lime juice (freshly squeezed)
13 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
4 drop Bob's Cardamom bitters
13 fl oz Chilled water/mineral water

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of lime zest twist and lime wedge.

How to make:

  1. MUDDLE cardamom in base of shaker.
  2. Add other ingredients and SHAKE with ice.
  3. FINE STRAIN into chilled glass.

Garnish:

  1. Express lime zest twist over cocktail and discard.
  2. Garnish with lime wedge on rim.

Review:

A charcoal-filtered light rum works best as more full-bodied rums simply don't sit well with the cardamon. Hit the right balance with the right rum and this delicately cardamon-influenced daiquiri is delicious.

I love cardamom! I muddled 4 pods instead of 3, and threw in a few extra dashes of cardamom bitters (Scrappy's), but I didn't end up with a strong cardamom taste, more like scented. Next time I might scale back the lime and really go for it on the muddling. This was a great use of the Scrappy's bitters -- they went perfectly!

Delicious indeed! I tried this with 10ml of velvet Falernum and a squeeze of agave syrup instead of the simple syrup. Nice evolution of the daiquiri with a slight medicinal note from combination the spices.
