Ginger Mojito

Serve in a Collins glass

Ingredients:
3 slice Fresh ginger root (thumbnail-sized slice)
12 fresh Mint leaves
2 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Lime juice (freshly squeezed)
12 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
3 oz Thomas Henry Ginger Ale

Garnish: Mint sprig

How to make:

MUDDLE ginger in base of shaker. Add mint and lightly MUDDLE (just to bruise). Add next three ingredients, SHAKE with ice and fine strain into glass filled with crushed ice. TOP with ginger ale.

What in the world? There is absolutely no taste of the rum in this, and I used Havana Club 3! A delicious and potent combination of ginger, mint and lime. I did overpour my ginger syrup (in place of a packaged ginger ale), so it did dominate, but tasty nevertheless.

Very bright, fresh taste and ginger adds a nice bite. I preferred more lime and less sugar. A drink that’s adaptable to your tastes.
