Ingredients:
1 12 oz Straight rye whiskey (100 proof /50% alc./vol.)
34 oz Licor 43 Original liqueur
34 oz Lemon juice (freshly squeezed)
34 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba or Vegan egg white alternative
3 23 oz Thomas Henry Soda Water

How to make:

  1. Select and pre-chill a Collins glass.
  2. Prepare garnish of coin-sized lemon zest..
  3. DRY SHAKE (without ice) to emulsify.
  4. SHAKE again with ice.
  5. FINE STRAIN into chilled glass. (No ice in the glass.)
  6. TOP with soda to bring the cocktail level with the glass rim.
  7. Leave stand for 45 seconds, then TOP with more soda to raise the foamy head above the rim.
  8. EXPRESS lemon zest twist over the cocktail and use as garnish.

History:

Adapted from a recipe created circa 2001 by Joseph Schwartz at New York's Milk & Honey after the owner, the late Sasha Petraske brought a bottle of Licor 43 into the bar and challenged Joseph to come up with a new cocktail. This cocktail features in Sasha's 2016 book Regarding Cocktails.
