Ingredients:
1 12 fl oz Light gold rum (1-3 year old molasses column)
12 fl oz Ferrand Dry Curaçao
12 fl oz Raspberry (framboise) sugar syrup
12 fl oz Pineapple juice
12 fl oz Orange juice (freshly squeezed)
14 fl oz Lemon juice (freshly squeezed)
14 fl oz Lime juice (freshly squeezed)
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of skewered Luxardo Maraschino Cherry and pineapple wedge.

How to make:

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

Garnish:

  1. Garnish with skewered Luxardo Maraschino Cherry and pineapple wedge on rim.

Review:

Slightly sweet and very fruity with raspberry and pineapple to the fore. Made with freshly prepared homemade raspberry syrup (1½:1) this is particularly delicious.

KNICKERBOCKER SPECIAL COCKTAIL.
1 Teaspoon Raspberry Syrup.
1 Teaspoon Lemon Juice.
1 Teaspoon Orange Juice.
1 Chunk of Pineapple.
⅔ Rum.
2 Dashes of Curaçao.

A delicious fruity combination, not too sweet. Can also be made with grapefruit instead of orange juice for a slightly drier version.

A truly flavoursome delight. Also an example of my wet palate, where I much prefer this to the original Knickerbocker.

This is a delicious, very fruity combination, entirely worth the number of ingredients. I also made one with blueberry syrup and it was equally good.
