Ingredients:
1 12 oz Del Maguey Vida Clásico Mezcal
12 oz Monin Pineapple Syrup
14 oz Cynar or other carciofo amaro
16 oz Pineapple juice
34 oz Lime juice (freshly squeezed)
4 drop Difford's Daiquiri Bitters optional
3 drop Saline solution 4:1 (20g sea salt to 80g water)
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of Luxardo Maraschino Cherry.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. Garnish with maraschino cherry drooped into cocktail.

This pineapple mezcal sour with a touch of bittersweet carciofo (artichoke) amari is a a riff on Thad Vogler's Single Village Fix.

History:

Adapted from a recipe created in 2014 at El Nivel in Covent Garden, London, England. The original recipe calls for house-made roasted pineapple syrup, and Anton Persson, a fellow Discerning Drinker, has posted a roasted pineapple syrup recipe along with his "approximation" of the Mezcal Fix recipe."
