Serve in a Martini glass

Ingredients:
1 12 fl oz Light white rum (charcoal-filtered 1-4 years old)
12 fl oz Dark/black/blackstrap rum
12 fl oz Chairman's Reserve Spiced Rum
1 13 fl oz Pineapple juice
1 12 barspoon Saline solution (20g sea salt to 80g water) or merest pinch of s
1 barspoon Maui base (homemade)
× 1 1 serving

Prepare:

  1. Select and pre-chill a MARTINI GLASS.
  2. Prepare garnish of skewered orange wedge.

How to make:

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into chilled glass.

To make Maui base (homemade):

A six-hour cold-macerated paste made from lime and chilli demerara sugar.

History:

Italian Bacardí Legacy 2013 winning cocktail, created by Giovanni Zottola at Nu Lounge in Bologna, Italy.

Maui Tiki Tiki is a fictional figure of tiki culture: a trickster who ambushes the Sun God, forcing him to lengthen the days. My drink symbolises the character's personality: a strong cocktail, salty, spicy, sweet and warm like his achievements, but with that bitter edge.
