Maui Tiki Tiki

Glass:

Serve in a Martini glass

Ingredients:

1 1⁄2 fl oz	Light white rum (charcoal-filtered 1-4 years old)
1⁄2 fl oz	Dark/black/blackstrap rum
1⁄2 fl oz	Chairman's Reserve Spiced Rum
1 1⁄3 fl oz	Pineapple juice
1 1⁄2 barspoon	Saline solution (20g sea salt to 80g water) or merest pinch of s
1 barspoon	Maui base (homemade)

Prepare:

1. Select and pre-chill a MARTINI GLASS.
2. Prepare garnish of skewered orange wedge.

How to make:

3. SHAKE all ingredients with ice.
4. FINE STRAIN into chilled glass.

Garnish:

5. Garnish with skewered orange wedge.

To make Maui base (homemade):

A six-hour cold-macerated paste made from lime and chilli demerara sugar.
