How to make

Glassware

Serve in an Old-fashioned glass

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of grapefruit zest twist.

Method

  1. STIR all ingredients with ice.
  2. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).

Garnish

  1. EXPRESS grapefruit zest twist over cocktail and use as garnish.

History

Created by Todd Crummy, a freelance bartender in Chicago, USA, who says this drink is “Named after Igor Stravinsky's seminal work Le Sacre du printemps (The Rite of Spring).

Todd's original recipe calls for: 1½ old tom gin, ½ Suze, ½ Cocchi Americano, ¼ Fee Brothers Rhubarb Bitters and ¼ Brooklyn Hemispherical Rhubarb Bitters.

Review

A riff on a White Negroni, originally incorporating a generous dosing of two types of rhubarb bitters. (Also works well with 15ml / 1oz Fee Brothers Rhubarb Bitters). Obviously, with such generous used of bitters, this is a dry bitter aperitivo style cocktail.

I halved the measure of Suze (Gentian) as this can easily dominate other flavours.... Used Plymouth Gin. All in all, a cocktail with a unique flavour, the dry Gentian tempered by the fruity Rhubarb Bitters - 15 ml being the most of any bitters I have deployed in a cocktail. On a second mux, I topped with sparkling mineral water. Refreshing and a bit different. Oh, it has a kick, too!
