Often in restaurants and bars, the porn star martini has a fairly thick foam and is velvety to drink. having tried the above recipe i dont get this much foam. I have been using Giffard passion fruit liqueur instead of Passoa. Is that the reason? Can anyone advise on how to make the foam (without using eggs)?
Well, we suppose that if you are satisfied with choreographed and tightly scripted passion, then you might find it watching a porn star. In this cocktail, which also strikes us as a bit of a fake, all we can taste is passion fruit...and the barest hint of vanilla and lime. Our advice is that, if you must seriously entertain this drink, simply pour it over a generous serve of vanilla ice cream and add a few slices of banana. Much better.
Would love to try the proper cocktail, but for now it worked out very well with: 3 cl vodka, 3 cl Galliano vanilla, 3 cl Passion fruit syrup, 1,5 cl lime juice and 6 cl Champagne.
I don’t have passion fruit puree or fresh passion fruit. So this recipe works in a pinch: 30ml vodka, 15ml lime, 15ml passion fruit syrup, 15ml passoa, 1/8 tsp vanilla essence
I've struggled to find real passion fruit puree so decided to try with mango & passionfruit smoothie from Aldi (yes, really!) "...apple/passion fruit/lemon juices not from concentrate + mango, banana purées" and it makes for a truly delicious and rich PSM. I go with 50 ml (DIY infused) vanilla vodka, 25 ml PF liqueur (again DIY = fresh PF, simple syrup, vanilla bean, vodka to 10% ABV), 100 ml Aldi mango/PF smoothie, 20 ml lime juice and ½ PF flesh. Shaken/sieved/garnished in the normal way.
I remember drinking these in LAB in 2008 or 2009, not knowing that I was actually drinking a little bit of cocktail history - its my only claim to fame. Would love to know if anyone has recipes for other LAB cocktails, particularly the creamy Solero vanilla/passionfruit concoction.
Many thanks, Chris. Anther one from the good old days to try. By the way, we are working to improve the presentation of these comments so they appear as a thread.
Note that unlike the current picture, you probably want more foam on top, which you should get from properly shaking passion fruit purée.
Also note that originally no lime belongs in a Porn Star martini, the passion fruit itself already provides enough tardness (said Douglas Ankrah who invented the Porn Star Martini)
I drank Porn Stars in both LAB and Townhouse, the latter made by Douglas. In later years he and most others used passion fruit puree but originally the Porn Star was made with fresh passion fruits, as per the recipe in Douglas' own 2004 book. I very much hope he was sponsored by Funkin as he was a great ambassador for passion fruit puree and his cocktail continues to be a massive driver of its sale. My earliest notes have the Porn Star made with lime juice and that remains my preferred recipe. A high-quality passion fruit puree works well in place of fresh fruit, but either way, I prefer with lime juice.
@SimonDifford Not saying you are wrong, I have never been at Townhouse or LAB not have I met or chatted with Douglas, but I did check multiple interviews with him and in all of them he shows to do it with puree and without lime, and he even remarks that lime does not belong and puree is essential. I do not know why we have a different recipe. Here are my sources: 1) https://punchdrink.com/articles/bartender-douglas-ankrah-pornstar-martini-cocktail-recipe/ 2) (this one is in Dutch) https://www.entreemagazine.nl/dranken/de-evolutie-van-de-pornstar-martini-een-gebakje-in-een-glas 3) A video of Douglas himself demonstrating how to make a porn star martini (just weeks before his death btw, he only lived till 51) https://www.youtube.com/watch?v=Wd5nkhK_8_w . Personally I think the recipe I posted is true to his recipe, based on these sources which seem pretty convincing, so I think there should be no lime, and you need puree.
Such an easy drink and another that is hard to stop at one. I dialled back the sugar syrup as I found it a tad too sweet with the vanilla vodka combo. I did make my own, so not sure if that might make a difference. Saved as a favourite, so that’s a good sign!
My vote: sex sells.
But also this vanilla-passion fruit-flavor in a drink needed(?) to be categorized in a way and I believe the name will survive as a description of that..
There are some recepies, that don't call for a Passoa. I am not sure, that buying bottle of passion fruit liquer for home bar is a good idea. Does liquer make a big diffrence? How can i substitute it?
Passoa has a very distinctive fruity flavour with citric acidity that will impact the cocktail if omitted. It's also great on fruit salads if you do buy a bottle!
Thanks for the quick response, really enjoying the website. The only difference is I'm using a different brand of vanilla vodka. I tried it again tonight and was a little more orange (maybe the passion fruits being more ripe) but still not as orange as the photo. Tastes fine to me and I may try one with some Rubicon also. I note the video say about pineapple but I did not use any as it isn't in the recipe above. Thanks.
15ml puree should do the trick. It adds an attractive foam that you don't get with fresh fruit but I like the slight sharpness fresh fruit imparts. Not going to be the same without a half passion fruit boat floating on top.
I bought this as a Christmas gift . He was absolutely thrilled with it . It’s his favourite martini . Everything to make it , in a box . I’d definitely recommend. Awesome.
I've made a few, what I consider to be successful, tweaks to this recipe. It's not one of my favourites, but both my daughters love this cocktail so I've scored it up a bit more than I would for myself.
