It's Monday afternoon and I've just finished watching Drinks Master on Netflix and was inspired to come here whilst watching Julie Reiner make this drink. I was feeling creative after binging the series, so did my own take using Cassis jam, tequila, vermouth, raspberry liquor and aquafaba. The sea salt in the juice from the tin of cannellini beans made the drink so much more complex than I expected! I garnished it with fresh black pepper. Yum yum
Warning: serious fine straining challenges. Use raspberry jam without "stones" or do mix the jam the with the alcohol and fine strain it before carrying on with ice and shake
Very nice but, after scientific side-by-side testing I prefer 2oz gin, 2oz lemon juice, ½oz raspberry syrup, 5 fresh raspberries and half an egg white, shaken with ice and then a second dry shake. That said, if I had no fresh raspberries or no raspberry syrup, the jam version would be fine.
My version of this replaces the vermouth with more gin, and replaces the raspberry jam with simple syrup and fresh raspberries. It's one of my favorites.
2oz gin
0.75oz fresh lemon juice
0.75oz simple syrup (1:1)
1 egg white (about 1oz)
5-7 raspberries
Dry shake for 6 seconds, add ice, shake for 15 seconds, strain, garnish with fresh raspberries on a toothpick.
