Serve in a Flute glass

Ingredients:
4 fresh Strawberries (hulled, small & ripe)
1 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Giffard Fraise des Bois liqueur
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
1 23 oz Brut champagne/sparkling wine

How to make:

  1. Select and pre-chill a Flute glass.
  2. Prepare garnish of strawberry with a mint sprig tip replacing the strawberry's leaves.
  3. MUDDLE strawberries in base of shaker.
  4. Add next 3 ingredients and SHAKE with ice.
  5. FINE STRAIN into chilled glass.
  6. TOP with sparkling wine and briefly stir. (Or pour half the sparling wine into the glass first to help reduce foaming and eliminate need to stir.)
  7. Garnish with strawberry on rim.

History:

Named after the Hollywood actress, nightclub entertainer and 1950s-60s sex symbol.

Born Vera Jayne Palmer in April 1933, Jayne Mansfield's fame and notoriety were helped by her numerous publicity stunts and flamboyant personal life. Nicknamed "Hollywood's smartest dumb blonde," she enjoyed several box-office successes, won a Golden Globe Award, and, in the sex comedy Promises! Promises! (1963) became the first American actress to perform a nude scene in a major movie.

Tragically, she died aged just 34 (on 29 June 1967) in a car crash in New Orleans.

Missing some complexity, might add some lime juice next time.

Like others, we wanted to dial down the sweetness a bit. We also wanted a bit more fruitiness. So we reduced the sugar syrup to 5ml, the fraise des bois (Merlet) to 25ml and instead of muddling the strawberries we juiced them and added 20ml. Lovely.

It was a bit sweet for my taste so I increased the rum to 2oz and added 1/2 oz. fresh lime juice. Kept everything else the same. Most friends liked this a bit better.

Wanted this a bit less sweet, so we cut back on the sugar syrup. Strawberries need to be very ripe and sweet. Works perfectly with a cold supper or at a brunch.
