Serve in a Coupe glass

Ingredients:
56 oz White overproof rum (unaged Jamaican/funky)
56 oz Strucchi Bianco Vermouth
56 oz Pineapple juice
56 oz Lime juice (freshly squeezed)
16 oz Vanilla sugar
1 dash La Fée Parisienne absinthe
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of pineapple wedge on rim.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

History:

Adapted from a recipe by Jason E. Clapham at the St. Edward's MCR at Oxford, England. Jason originally made this with frozen cubes of pineapple and lime juice, in a blender.

Pineapple and rum, sweetness is balanced with brightness of the lime and pineapple. I used vanilla syrup - I think I should have used 2t and not just 1t. I also think I would be better served by spritzing the glass with absinthe rather than adding to the cocktail directly. Appealing color (hazy yellow) - this is one of the few tiki-style drinks that looks good in a glass.

Usually I always drop the measure of syrup suggested by Mr. Diffords, as the amount of sweetness seems to be a major point of difference in my taste from kind of more balanced ones; here however I have to say that I was surprised by first the taste of the overall drink, and I soon came to realize that lime was too overwhelming. It might be the case (and I'll try again today) that if you drop down the level of lime you obtain a very different kind of cocktail alltogheter, but we'll see

I have to confess that, mid-way through it, it has acquired its value; don't expect however the sweetness associated with vermouth bianco, and be prepared for a game of struggle-relief as the vanilla appears in the after-taste of every sip, covering the dryness of the lime and melting with it. But yeah, it is a great cocktail IMO.

Interesting flavour combination but can be different depending on the rum at hand. It definitely needs a more perfumed rum. Tastes great even if you don’t have the dash of absinthe.

Perfect. We make our own vanilla sugar. This was a great blending of flavours that all work perfectly together. It went perfectly with a very spicy Mexican dinner.

I looked at the proportions with suspicion, but they work. I’m not sure what a ‘dash’ of absinthe is - I did my usual and coated the glass. Summery with a hint of sophistication.
