Ingredients:
1 13 oz Hayman's Old Tom Gin
34 oz Galliano L'Autentico liqueur
34 oz Lemon juice (freshly squeezed)
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer

How to make:

  1. Select and pre-chill a Martini glass.
  2. Prepare garnish of lemon zest twist expressed & discarded. Adorn with a Luxardo Maraschino Cherry dropped into cocktail..
  3. DRY SHAKE all ingredients (without ice) to emulsify.
  4. SHAKE again with ice.
  5. FINE STRAIN into chilled glass.

Review:

Delicate anise and peppermint with citrus freshness. Old Tom gin fortifies and adds piney juniper while amplifying pleasing liquorice notes. A cleansing aperitivo.

Created in 2006 by yours truly and originally served on-the-rocks, but revisited and reformulated in 2023 as straight-up serve.

This is lovely, anise and herbs come through nicely. Not sure why Milano Sour though, shouldn't it be called Livorno Sour?
