Serve in a Coupe glass

Ingredients:
1 fresh Passion fruit (fresh)
1 12 oz Light gold rum (1-3 year old molasses column)
12 oz Luxardo Apricot Albicocca Liqueur
1 oz Lime juice (freshly squeezed)
14 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
14 oz Monin Vanilla Syrup

Garnish: Float passion fruit

How to make:

Cut passion fruit in half and scoop flesh into shaker. Add other ingredients, SHAKE with ice and fine strain into chilled glass.

Doing this cocktail multiple times, I suggest to be carefully with store-bought vanilla syrups, they might tend to be overpowering.

A refreshing if slightly tart cocktail. On the next go round I upped the vanilla syrup by 50% which cut the tartness and helped accentuate the apricot flavour. Went down easily on a warm sunny evening.

As the passion fruits finish, I keep on making passion fruit drinks. Was a great pairing with a burger. It was fairly tart, which I'm not sure was the intention, but it worked great for me. The only complaint is that I feel the apricot got lost.

Figuring it would benefit from the vanilla standing out a little more, I reduced this to a five ingredient cocktail by ditching the simple in favor of more vanilla syrup - very tasty. The apricot is surprisingly prominent between the big flavors of the passion fruit and the full shot of lime juice, yet everything gets its time to shine; including the rum.

I did this cocktail several times and everybody loved it. If you get only passion fruits in not tropical quality, I suggest to replace the sugar syrup with passion fruit syrup, although the cocktail looses some finesse.
