Glass:

Serve in a Martini glass

Ingredients:
1 fresh Plum (stoned & peeled)
2 fl oz Light white rum (charcoal-filtered 1-4 years old)
12 fl oz Lime juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
× 1 1 serving

Prepare:

  1. Select and pre-chill a MARTINI GLASS.
  2. Prepare garnish of lime wedge.

How to make:

  1. CUT plum into quarters, remove stone and peel.
  2. MUDDLE plum in base of shaker.
  3. Add other ingredients and SHAKE with ice.
  4. FINE STRAIN into chilled glass.

Garnish:

  1. Garnish with lime wedge on rim.

Review:

Depending on the ripeness of the plums, you may need to adjust the quantity of sugar.

Replaced the plum with pear (are there any pear based drinks on here?); wife said it wasn't sweet enough but I kind of liked it!

This is a very tasty drink! After a few experiments (life is so hard), I can also recommend a variation with half a plum with the skin still on. The flavor is quite different, tart and tannic, and holds up well to a darker rum. However, it's absolutely good as written. Mine was paler than the one shown, a beautiful peachy orange.
