Glass:

Serve in a Collins glass

Ingredients:
2 fl oz Hayman's London Dry Gin
1 fl oz Lime juice (freshly squeezed)
12 fl oz Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
3 Top up with Ginger ale chilled
× 1 1 serving

Prepare:

  1. Select and pre-chill a COLLINS GLASS.
  2. Prepare garnish of lime wedge.

How to make:

  1. SHAKE first 3 ingredients with ice.
  2. STRAIN into ice-filled glass whilst also pouring ginger beer.

Garnish:

  1. Garnish with lime wedge.

Review:

Long and refreshing with lime freshness and a hint of ginger.

An extremely refreshing drink. Very easy to drink. A more "gingery" riff of a Tom Collins. This one will be dangerous in the summer time (in a good way).

I added two dashes of Angostura bitters, man what a great drink with and without the bitters

I used 1:1 sugar syrup to cut down a bit on the sweetness. Quite refreshing!
