Ingredients:
1 oz Blended Scotch whisky
23 oz Torabhaig Peated Single Malt Whisky
23 oz Lemon juice (freshly squeezed)
12 oz Ginger liqueur
12 oz Honey syrup (3 parts honey to 1 water by weight)
16 oz Amaro Montenegro
× 1 1 serving

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of skewered candied ginger & mist with 3 sprays of peated whisky.
  3. SHAKE all ingredients with ice.
  4. STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).

History:

Created in May 2023 by yours truly at the Clocktower in Rye, England. This riff on a Penicillin cocktail is so named due to 'Phenoxymethylpenicillin' being an antibiotic and 'phenols' being compounds that contribute to the flavour of whisky.

replace montenegro with chartreuse yellow is perfect, maybe 10ml or more.

I could not taste the montenegro at all, sadly. I tried again but upped it to 10ml and it's just about noticeable...but I don't think it's an improvement on the original. I do like having more peated whisky and will be trying that in my regular penicillins.

Of course - it's still a delicious drink! Just the original Penicillin is absolutely divine.
