Ingredients:
1 oz Patrón Reposado tequila
2 oz Pineapple juice
12 oz Lime juice (freshly squeezed)
4 drop Difford's Daiquiri Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of pineapple wedge on rim.
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

Review:

Restrained in alcohol but not lacking in balance nor fruitiness. I've added a mere four drops of our Daiquiri Bitters to Trader Vic's original recipe but I feel he'd have approved.

Adapted from a recipe in Victor Bergeron's 1972 Trader Vic's Bartender's Guide.

TEQUILA MATADOR
1 ounce tequila
2 ounces pineapple juice
Juice of ½ lime
Shake well with shaved ice. Strain into chilled cocktail glass.

Because our Daiquiri biters have a pineapple and mint flavour that suits this cocktail.
